Everything you knead to know

Learn more about our bagels, our process, and the ingredients behind every bake.

Our bagels are made in small batches with a careful mix, a proper rest, and a boil before baking. That process creates the chewy centre and golden crust we love.

We mix, shape, proof, boil, and bake each batch. Timing can vary by flavour and production day, but we always aim to serve bagels fresh and at their best.

Our pricing reflects our commitment to quality ingredients sourced from the best suppliers. We use premium pistachios, imported truffle oil and Parmigiano Reggiano from Italy, real 100% pure maple syrup, Malden flaky salt, and carefully selected flour, water, yeast, and other specialty additions for each bagel variety. These ingredients cost more, but they deliver the flavour and texture our customers expect. Please contact us before ordering if you have an allergy or ingredient question.

Our bagels are baked fresh throughout the day. Stock and availability shift based on time and demand—we sell out regularly. If you need a specific quantity or prefer a particular pickup time, contact us ahead and we'll make sure we have what you're after.

Our bagels are boiled and baked on traditional burlap boards, a hallmark of authentic New York bagel making. Occasionally, fine fibers from the board may adhere to the bottom of the bagel during baking. These are completely harmless and are simply part of the craft. Rest assured, what you're seeing is not hair—it's a natural byproduct of the time-honored method that gives our bagels their signature crust and chew.

Our kitchen handles common allergens, and we cannot promise an allergen-free environment. Please speak with our team before ordering so we can share current ingredient information and help you choose safely.
